Installing a NOR-only ipsw will NOT erase any data. So you are good to go.

I have my ipod touch 2g with 3.1.2 Blackra1ned. I’d love to have it boot with verbose mode. Will doing this process listed above erase all of the data (apps, mods, etc.) that I have put on here already?

No, that is not possible at this time.
People should not have updated to 3.1.3 in the first place, it has no new features and it was all over the place that you weren’t supposed to do it.
